Are you ready for the most easy-peasy, yummy recipe ever? I’m always on the quest for healthy snacks, so when my friend Carolyn explained the magic that was roasted chickpeas to me, well, I was sold.

Really, there’s nothing to it. Simply drain a can of chickpeas and toss with 2-3 tablespoons  olive oil (enough to coat evenly) in a bowl. Lay them out on a baking sheet in a single layer and crank your oven to 400 degrees. These will need a bit of help becoming tasty, so feel free to flavor them liberally with salt, pepper or garlic (I went with a combo of all three). If you’re looking for a little kick, try tossing them with red pepper flakes or a little bit of chili powder!

Cook for at least 25 minutes, or until the shells have cracked and turned crunchy. You’ll want to toss the chickpeas around the pan with a spatula a few times during the cooking process–this guarantees that they’ll be browned evenly.

Enjoy straight out of the oven, or keep them in a plastic bag as snacks for up to three days. I told you that was easy, right? Now go, enjoy!

    I agree with Stephanie, I’ve never been a fan of chickpeas, but I do know how good they are for you! I’ve been trying to eat more lentils so I think I’ll give this recipe a try!
